Paneer curry recipes

 To make paneer, you will need the following ingredients:


- 1 liter of milk (preferably full-fat)

- 2 tablespoons of lemon juice or vinegar

- Cheesecloth or muslin cloth

- A colander or strainer

- A heavy object to press the paneer (such as a heavy pot or a weight)


Here are the steps to make paneer:


1. Pour the milk into a large pot and heat it over medium heat until it comes to a gentle boil. Stir occasionally to prevent the milk from sticking to the bottom of the pot.


2. Once the milk starts boiling, reduce the heat to low and add the lemon juice or vinegar. Stir gently and you will notice the milk curdling and separating into curds (solid) and whey (liquid). If the milk doesn't curdle, add a little more lemon juice or vinegar.


3. Turn off the heat and let the mixture sit undisturbed for a few minutes to allow the curds to fully separate from the whey.


4. Line a colander or strainer with a double layer of cheesecloth or muslin cloth. Place the colander in the sink or over a large bowl to catch the whey.


5. Carefully pour the curdled milk mixture into the lined colander, allowing the whey to drain away. Gently rinse the curds with cold water to remove any lemon juice or vinegar taste.


6. Gather the edges of the cheesecloth and tie them together to form a pouch. Hang the pouch over the sink or a bowl and let it drain for about 30 minutes to remove excess whey.


7. After draining, place the cheesecloth-wrapped paneer on a flat surface and shape it into a block or disc. Place a heavy object, such as a pot or weight, on top of the paneer to press it. Leave it for 1-2 hours to further drain and compress.


8. Remove the weight and unwrap the paneer. It should be firm and ready to use. Cut it into cubes or slices as desired.


Your homemade paneer is now ready to be used in various Indian dishes like palak paneer, paneer tikka, or paneer curry. Enjoy!
